Cooking over 40 can be complicated. Food intolerances, smaller portions, healthy ingredients-it’s enough to make you want to go out to eat! If you’re looking for some simple, healthy recipes you can add to your rotation, here’s help.
The 10 recipes featured below are some of my favorites. Not only are they quick to make, but they feature fresh ingredients I usually have on hand. I love the feeling of a full tummy-especially when there’s no guilt or heartburn later on.
Baked Spaghetti Casserole

Why didn’t I know about this one before now? I’m linking to a similar recipe to mine, for those of you who don’t have dietary restrictions. My version substitutes spaghetti squash for pasta, adds a pound of ground beef and substitutes dairy free cheese for the topping.
So filling, low carb, and yummy during a weeknight.

Mix up a batch with whatever dried fruits and nuts you have on hand. You can easily melt your dark chocolate pieces in the microwave if you cook at 30 second intervals just until melted. This healthy option will satisfy your sweet tooth, for sure.
