Cooking over 40 can be complicated. Food intolerances, smaller portions, healthy ingredients-it’s enough to make you want to go out to eat! If you’re looking for some simple, healthy recipes you can add to your rotation, here’s help.

The 10 recipes featured below are some of my favorites. Not only are they quick to make, but they feature fresh ingredients I usually have on hand. I love the feeling of a full tummy-especially when there’s no guilt or heartburn later on.

Baked Spaghetti Casserole

Why didn’t I know about this one before now? I’m linking to a similar recipe to mine, for those of you who don’t have dietary restrictions. My version substitutes spaghetti squash for pasta, adds a pound of ground beef and substitutes dairy free cheese for the topping.

So filling, low carb, and yummy during a weeknight.

Dark Chocolate Bark

Mix up a batch with whatever dried fruits and nuts you have on hand. You can easily melt your dark chocolate pieces in the microwave if you cook at 30 second intervals just until melted. This healthy option will satisfy your sweet tooth, for sure.

Monkey Protein Shake

My co-workers know all about my “monkey shakes”. This makes a great breakfast on the go for busy mornings. I make several ahead and freeze them to use during the week.

Shrimp Scampi with Gluten Free Pasta

Just because I’m gluten and dairy free doesn’t mean I sacrifice guilty pleasures like shrimp scampi! This recipe uses rice pasta, but you can substitute your favorite option. I also use dairy free cheese for the parmesan.

Beef and Broccoli Stir Fry

Make sure to substitute gluten free soy sauce in this recipe. What a great way to use leftover beef! Delicious, healthy and filling-this recipe takes minutes to put together.

Roasted Chicken Salad

This recipe from Martha herself is so similar to my mom’s. I use a premade roast chicken or leftover breasts for this comforting feast. Make a sandwich with gluten free bread or serve in a lettuce leaf.

Fruit Crumble

Especially tasty with fresh summer fruites, this recipe can be adapted to whatever fruit is in season. I can hardly wait for this one to get out of the oven!

Gluten Free Chocolate Chip Cookies

Trust me when I tell you these are incredible. I have searched high and low for a gf chocolate chip cookie recipe that tastes like the real thing. This recipe nails it!
